The mandate I gave myself when I started this Blog was; ALWAYS be truthful, correct, informative and, if at all possible humourous.
As I said in the beginning, I will be blogging about meat: the good, the bad, the ugly, all things associated with it, and safe food practices too. I will try to demystify the ‘grey’ areas for you, pull back the curtain and shine a light on all the things I’ve learned over my career in this business, spanning the past 35+ years.
Most of all, I want to earn your trust. I WILL TELL IT LIKE IT IS … PROMISE!
Now then … regarding what happens to meat when it’s exposed to Oxygen (the Bloom), and my post entitled “How ’bout a little love”. (The ‘little love’ reference meaning the public STILL doesn’t believe us).
The “Bloom” is one of the MOST FRUSTRATING issues we deal with DAILY! I/we (as an industry) can’t seem to make people believe the science behind the chemical reaction. Meat protein + oxygen = colour change.
All I can do is continue the dialogue.
