The Grim Reaper Tour 2016 and, the BEST Turkey you’ll ever cook!

Greetings Carnivores,

It’s been a couple of weeks now since we all celebrated the festive season with our friends andΒ loved ones over some delicious food and drink. I know most of you have your own favourite recipes but, I just wanted to share a method I stumbled onto this year for cooking the best Turkey I have EVER made.

But before I get toΒ todays CC offering,Β by way of reflection I wanted to chat about the year that was for a minute or two so, please indulge me.

Here goes nuthin’.

2016 has come and gone and I for one am NOT sorry to see it go. The Grim Reaper tour 2016,Β took sooo many of our music and big screen idols, heroes and icons it hurts just to think about it.

I am a huge, lifelong fan of all music. When I was young it was shocking and tragic for me to lose the likes of (in no specific order): Morrison, Hendrix, Joplin, Cass, Moon, Chapin, Croce, Allman, Holly, Valens, Rhoads, Vaughn, Elvis and more recently,Β MichaelΒ (and THAT’s just a short list) of some of the musicians I loved and lost at such a young age to accidents and lifestyle foolishness.

But, this past year has been a different kind of “culling”.

In 2016 we lostΒ Glenn Frey, David Bowie, Prince andΒ George Michael to name a few off the top of my head and just last week, Carrie Fisher as well asΒ her Mom, Debbie Reynolds. AND, let’s not forget the timeless and beloved Canadian music icon Leonard Cohn, all gone now to the “Bridge” courtesy of theΒ Grim ReaperΒ tour 2016. ThisΒ has brought about a different kind of feeling for me … one ofΒ nostalgia, reflection and … mortality.

Here’s what I mean.

Losing my heroes when I was in my teens, andΒ twenties was shocking and tragic because they were all so young and still had soooo much to give. I felt so “ripped off” thatΒ I never got to see the magic that would have been the rest of their collective careers.

Now however, with the exception of PrinceΒ … it seems somehow different but no less tragic, to lose the likes of theseΒ wonderful artistsΒ to (mostly) natural attrition … old age. Losing Prince (and Michael)Β to an accidental overdose was like a punch in the stomach.

I’ve neverΒ really felt or acted my age, and certainly never considered myself to be old (I’m Peter Pan, dammit). I always figured, hey … if you haven’t grown up by the age 50 well,Β you just don’t have to. Yet here I am, entering my 60’s in just a few short months, and staring down the barrel of my Golden years (I hope).

I guess what I’m trying to say is … I’m at the age where, for the first time in my life, I’m becoming acutely aware of my own mortality. How does all this tie into the loss of my music and big screen icons? Well, let’s just say that I’m very close to the same age as the ones we’ve recently lost and for the first time I’m thinking, wow … maybe THIS “Peter Pan” has gotten a little long in tooth. It doesn’t really “freak” me out … I’m just aware of it nowΒ and, I’m trying hard toΒ live each day to the fullest.

But … I digress AGAIN.

What does any of this have to with the best Turkey method I’ve ever stumbled across, you ask?

Well, … nothing really. I was simply trying to figure outΒ how I’d “frame” this offering for the ol’ CC Blog and, started thinking about the reason we eat Turkey at this time of the year in the first place, next thing you know I’m sharing my year-end review of sorts.

Ok, back to the meat …

Just before Christmas, I readΒ somewhere (please forgive me, whoever you are for not giving you “name” recognition and credit for this … I just CAN’T remember where IΒ read it) but … it goes like this: quite simply,Β theΒ method involves cooking the Turkey at 170 degrees F for (get this) 17 HOURS!

I thought, I have GOT to try this and, I know what you’re thinking “what about making sure you kill any harmful bacteria”… after all, we don’t want to invite (click here:)Β “Sam and Ella” over for dinner with your family.

Well, this low and slow method requires FIRST blasting the bird at 500 degrees for one hour to make sure anything harmful is killedΒ then, all you do is roll the temperature down to 170 and go to bed. I also used a digital temperature probe to help me “tickle” the temps on my prehistoric oven.

This idea is sort of like cooking (click here:)Β Sous Vide, where the meat will never over cook since it can’tΒ rise above the temperature of the cooking vessel, in this case the oven at 170.

Easy Peasy!

I should say that prior to cooking, I submerged my bird in a simple salt, brown sugar, soyΒ and spice brine for 3 daysΒ to infuse some flavor. Next, I did a little math to calculate when to putΒ it into the oven. The day before my family came for Christmas dinner, I rinsed and prepped theΒ Turkey before I went to bed then,Β I set my alarmΒ andΒ got up at one o’clock in the morning. I preheated my oven and blasted the bird, uncovered for an hour then covered it (I just used tin foil), turned it down to 170 and, went back to bed. Simple as could beΒ Β  πŸ™‚

At 5 o’clock that afternoon IΒ removed it from the ovenΒ to let itΒ rest and … it was fall apart tender. I had no intention of even TRYING toΒ “carve” the beast, opting rather to “pull” itΒ instead.

OMG!

I’ll NEVER cook aΒ Turkey ANY OTHER WAY!

It was SUPER tender, SUPER juicy with a hint of salt, OMG … *insert mouth-watering here*Β Β  πŸ™‚

In closing, as we enter a New Year … full of uncertainty and hope for the future, I wish nothing but the best for each and every one of you. LiveΒ every day to the fullest and, be kind to one and other.

Oh, andΒ please Reaper … lay off the Musicians … we’ve lost toooo many already.

    Howdy Mr Doug. A pleasant morning read! And a nice strong post for your comeback tour! Yeah, what was with 2016 and celebrities? That was crazy. On New Years Eve I remember thinking if you’re a famous person and you’re still alive, just roll yourself up in bubble wrap and stay in bed! But, yeah, it comes for us all, eventually. Even the Peter Pans of the world. It doesn’t care how much money you have, or how nice of a guy we were, or that we have cool motorcycles. Nope, it don’t care.

    On that happy note, loved the turkey recipe. I know a brine does amazing things to turkey. But 17 hours at low heat, I’ve never tried that! That’s nuts Dougie! And something I must do, obviously, and furthermore, somehow adapt to the pit. Cause imagine that same turkey with that smokie goodness infused in there somehow. I think you’ve reached gobbler utopia there!

    Anyways, it is well to see you blowing the cyber dust off the old blog here. Very cool to have you back. Here’s to 2017. May it be a whole bunch better than last year.

      Oh yes, … the Turkey was exceptional and, I too need to figure out how to adapt this method to the smoker. Maybe the answer is to smoke it for a few hours FIRST … then into the oven … Hmmmmm , I think I’m onto something πŸ™‚
      When you try this (and I’m sure you will) the only option is to “pull” it … it is just that tender … *mouth watering*

        For sure smoke it in the beginning, I’d say. I’ve done similar with the big butts before. A few hours on the pit, and then for what ever reason, move it to the oven to finish it off. You’ll be none the wiser and thing it was done entirely on the smoker. The big green eggs would be well suited for the project, as they can be run at 170 I believe, as well as be cranked up to 500.

        Good times. And yes to bubble wrap!

    Question: How large of a bird did you roast Doug? I’d surely like to try this method as well, but alas, I only cook for 2 these days.
    Oh, and have you ever heard of Kalua Turkey? MMM!

      No,… I’ve never heard of Kalua Turkey Auntie … do tell?
      My bird was pretty close to 20 pounds ( I have a LARGE family) πŸ™‚

        You cook your Turkey in an underground oven or Imu. I “Goggled” that and found that you can Kalua Style the birdie in the oven as well…HEH! Why didn’t I think of that before! I already Kalua Pork in the oven…

        It’s A Luau!


        Now, I was watching a YouTube from this guy in Hawaii, and he used a stick of butter, Hawaiian Sea Salt and Liquid Smoke; I’d wrap that puppy up in Banana leaves (in Hawaii we use Ti leaves, but can’t get that here in the middle of the desert πŸ˜‰ ) and tin foil, bake for 3 1/2-4 hours at 350 and bob’s your uncle.

    I know what you mean about 2016. I won’t miss it even a little bitty bit. THAT was a bumpy road. 2017, however, is starting off brilliantly. Sometimes you have to live through the sucky stuff to appreciate the good stuff. I’m glad you’re back. I’ll look forward to your shared wisdom on all things meaty. Happy New Year!

      I had major back surgery and sitting for prolonged periods was difficult, as such my self imposed exile was a challenge to break though but … I think I’ve found my voice again … Again, … THANK YOU for you continued support πŸ™‚

      Thank you for stopping by Donald. πŸ™‚ Yes, … this Turkey method is exceptional … the next time I try it though, I’m going to put it in my smoker for a few hours before the long slow cook … I’m certain that will add another depth of flavour to REALLY take this one over the top!! πŸ™‚ πŸ™‚ πŸ™‚
