    Heh Doug – great series. Thanks for walking us through the process. I have a question for you.
    Can you skip the cold smoke step or is that really a deal breaker when making bacon??

      If you want Monica, you can buy some liquid smoke and add that to your brine to give you the essence of smoke. Otherwise no, it’s not a deal-breaker. I just like smoked bacon.

      You could skip the cold smoking step Monica, but to me bacon just has to be smoked. I would suggest if you don’t want to smoke it, try using Liquid Smoke in addition to your brine.
